Salento is the name for the 100 km long and 40 km wide peninsula with the provinces of Brindisi, Lecce and Taranto, which forms the heel of the boot. The area covers 11,600 hectares of vineyards. Grape varieties authorised in the region may be used. Varietal wines must contain at least 85% of the variety in question, up to 15% may be other varieties. Dual-varietal wines must be blended from at least 50 to 85% of the main grape variety and 15 to a maximum of 50% of other varieties. For the wines, a minimum alcohol content is prescribed for each wine type, but no maturation periods.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
