Designation (also known as filling, pinning, topping) for the loss compensation of the empty space in wine containers caused by shrinkage, as is frequently the case in wooden barrels in particular. This must be done above all for quality wines with a wine of the same origin. This is usually done at least once a month during the ageing process. See also under vinification.
