Récoltant

French designation (abbreviation R) for an independent winegrower in Champagne who does not grow his own wines and does not belong to a cooperative. The grapes of his harvest are processed into champagne by a Négociant Manipulant (NM) or Récoltant Manipulant (RM) in a contract procedure. This protected term, which is only rarely used, does not exist outside of Champagne.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
