Description for the positive overall impression in the context of a wine evaluation or wine address. The wine is characterised by good structure with high overall extract and striking acidity. Related terms are extract-rich and nervy. The term "race" is also often used to describe a wine of high quality. Related terms regarding acidity are fine-acid, fresh, lively and sparkling. An excessively high or inharmonious proportion of acids is described with the negatively connoted terms aggressive, acetic, edgy, sour and sharp. See also under sour wine.
The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
