Description for the positive overall impression in the context of a wine evaluation or wine talk. A racy wine is characterised by a good structure with high overall extract and distinctive but well-integrated acidity. It is lively, exciting and expressive without being harsh or aggressive. The term does not describe a single flavour, but a combination of substance, inner energy and freshness. The term "Rasse" is also often used to describe a high quality wine. Related terms are extract-rich, finely acidic, fresh, lively, nervy, rezent and tangy. An excessively high or inharmonious proportion of acids, on the other hand, is described with the negative terms aggressive, acetic, edgy, sour and sharp.
