Pouring height

Designation for the height of the grapes in a harvest container during the grape harvest. The lower the height of the grapes, the higher the quality of the grape must pressed from them. This is because too high a pouring height can damage and contaminate the grapes or cause them to be infested with rotting bacteria. Often there are country or region-specific regulations with maximum heights (for example in Austria max. 35 cm for the highest quality level of sparkling wine). See lists under the keywords vineyard care (activities in the vineyard) and vinification (wine types and techniques).
