The French winery "Champagne Piollot Père & Fils" is located in the commune of Polisot (Département Aube) in the Champagne region. The winery was founded by Athanase Piollot (1817-1906). Today it is run by Robert and his son Roland Piollot. The vineyards cover 8.5 hectares and are planted with Pinot Noir (62%), Chardonnay (20%), Pinot Blanc (11%), Pinot Meunier and Arbane. Some of them are very old vines selected by clonal selection. In the vineyard, organic viticulture is practised in combination with biodynamic methods. The farm has been certified by ECOCERT since 2014. The exclusively organic fertilisation is done with self-produced compost (e.g. grape pomace). During the vegetation cycle, much emphasis is placed on foliage care. Fermentation is partly spontaneous with the vineyard's own yeasts. The champagnes mature on their lees for three to six years. Oversizes are also offered in magnum (1.5 l) and jeroboam (3 l). The premium products include "Les Gravelées Rosé" (100% Pinot Noir, 3 years, 0 dosage, unsulphured) and Colas Robin (100% Pinot Blanc, 3 years, 0 dosage).
