Peroxyacetic acid

Colourless, pungent-smelling liquid (also ethane peroxo acid, peracetic acid, PER), which has a strong oyidizing effect. It is produced by mixing acetic acid with hydrogen peroxide or by oxidising acetaldehyde. Peroxyacetic acid has a strong skin and eye irritating effect on humans and animals. It is widely used as a disinfectant, including in viticulture for cleaning, disinfecting and sterilising bottles before bottling. See also other agents and processes under preservation.
