The winery is located in the municipality of Höflein in the Carnuntum wine-growing region of Lower Austria. It is run by the fourth generation of the family, Robert Payr jr. The vineyards cover 12 hectares of vineyards in the Bühl, Kirchberg and Rothenberg vineyards (Höflein), as well as Spitzerberg (Prellenkirchen). They are planted with the red wine varieties Blauer Portugieser (70% of the total area), Zweigelt, Blaufränkisch, Merlot and Cabernet Sauvignon, as well as with the white wine varieties Grüner Veltliner, Chardonnay, Sauvignon Blanc and Goldburger. The farm produces sustainably according to the certified guidelines of Sustainable Austria. The vineyards are cultivated according to the guidelines of organic viticulture. Only physiologically ripe and healthy grapes are processed through selective manual harvesting in the vineyards and repeated checks in the cellar. Depending on the type of wine, the wines are matured in stainless steel tanks, in large wooden bar rels or in barriques for up to 36 months.
The Wine lexicon helps me to keep up to date and refresh my knowledge. Thank you for this Lexicon that will never end in terms of topicality! That's what makes it so exciting to come back often.
