The winery is located in the municipality of Freyburg-Zscheiplitz in the German wine-growing region of Saale-Unstrut. It was founded in 1990 by Irene and Herbert Pawis with only 0.5 hectares of vineyards. Son Bernard Pawis took over the business in 1998 and laid the foundation for expansion with a newly built modern winery. racking In 2007, the winery moved from Freyburg to the lavishly renovated historic monastery estate in the Zscheiplitz district of Freyburg. A wine tavern is attached. Events organised by the winery enrich the cultural life of the region. Furthermore, young association concepts such as "Wein rockt" (Wine rocks), guided tours in the monastery courtyard and the collection of donations for the preservation of the monastery grounds are supported. As a recognised training company, young people are offered the opportunity for internships and further education. Worth mentioning is the principle of sustainability in production and operation with the use of solar energy for electricity generation, collection of rainwater for irrigation, and use of combined heat and power for heating and electricity generation.
