The winery is located in the municipality of Freyburg-Zscheiplitz in the German Saale-Unstrut wine growing region. It was founded in 1990 by Irene and Herbert Pawis with only 0.5 hectares of vineyards. Son Bernard Pawis took over the business in 1998 and laid the foundation for expansion with a newly built modern winery. In 2007, the company moved from Freyburg to the elaborately renovated historical monastery estate in the Zscheiplitz district. A Straußwirtschaft is attached. Events organised by the winery enrich the cultural life of the region. Furthermore, young association concepts such as "Wein rockt" (wine rocks), guided tours in the monastery courtyard and the collection of donations for the preservation of the monastery complex are supported. As a recognized training company, young people are offered the opportunity for internships and further education. Worth mentioning is the principle of sustainability in production and operation with the use of solar energy for power generation, collection of rainwater for irrigation, and the use of combined heat and power generation for heating and electricity

Today the vineyards cover 13 hectares of vines, some of which are steeply terraced and have been extensively renovated by the winery, and the historic vineyard walls are constantly being maintained. The vineyards are located in the individual sites Edelacker and Mühlberg (Freyburg), as well as Sonneck (Naumburg). They are planted with the white wine varieties Riesling, Pinot Blanc, Pinot Gris, Müller-Thurgau, Silvaner, Bacchus and Kerner as well as the red wine varieties Dornfelder, Portugieser, Pinot Noir and Regent. We consistently practice close-to-nature, environmentally friendly viticulture with fertilization according to demand and the results of regular soil analyses, greening and the use of pesticides that are gentle on beneficial organisms

The wines are developed with controlled fermentation and individual maturation with regionally typical taste potential of the individual grape varieties, predominantly dry and fruity. Special red and white wines mature in barrique barrels made of regional Triassic oak. Since the 2001 vintage, the Rieslings and Burgundies from the Freyburger Edelacker have been produced and marketed as Grosses Gewächs. Ice wines are also pressed in years with suitable weather conditions. Noble brandies (marc, yeast) and bottle-fermented sparkling wines are also produced. The wines are sold nationwide to end consumers, gastronomy and specialist trade customers. The winery has been a member of the VDP (Association of German Prädikat Wineries) since 2001.
