In February 2012, the SCOF (Standing Committee on Organic Farming) issued an EU regulation with precise rules for vineyards and, in contrast to the past, cellars for the production of organic wine. Until then, organic winegrowers could only state "wine from organically and organically grown grapes" on the label, as there were no production rules for the vinification of organic wines. However, this labelling is now no longer permitted. Wines produced according to the new rules may now be labelled either as "organic wine", "ecological wine", "organic wine" or "wine from ecological/organic cultivation". The production of organic wine is therefore directly linked to certified organic viticulture. Since 1993, the world's largest organic trade fair, Millésime Bio, has been organised annually for alcoholic beverages from organic cultivation.

The prerequisite is compliance with the guidelines for vineyard management and vinification in accordance with the organic wine guidelines of the EU Organic Regulation and the resulting certification as an organic operation by one of the state-approved organic or ecological inspection bodies.
