A specialty (also Nikteri) from the Greek island Santorini. The name (night work) of the dry white wine refers to the grape harvest that takes place only after dusk and the work that ends in the early morning hours. It is often madesortenreinpurely from Assyrtiko and aged for a long time in wooden barrels.
