A speciality (also Nikteri) from the Greek island Santorini. The name (night work) of the dry white wine refers to the grape harvest, which takes place only at dusk and the work that ends in the early hours of the morning. It is often pressed from Assyrtiko and aged for a long time in wooden barrels.
