The term has two meanings:
Unit of measurement (normalised must scale) for the determined must weight or a quality classification in wine, used in Slovakia (Normalizovaný Muštomer) and in the Czech Republic (Normalizovaný Moštoměr). One degree NM corresponds to one kilogram of sugar per 100 litres of grape must. See also under refractometer.
Abbreviation for Négociant Manipulant; a particular form of champagne producer.
The Wine lexicon helps me to keep up to date and refresh my knowledge. Thank you for this Lexicon that will never end in terms of topicality! That's what makes it so exciting to come back often.
