Must fermentation

Term for fermentation in the production of white wine (from white wine varieties) and rosé wine (from red wine varieties). This is sometimes used to make a distinction from the mash fermentation commonly used in the production of red wine, which involves the grapes (without or with destemming). See also under winemaking.
