An acid contained in small quantities in wine (also galactaric acid, mucic acid), which belongs to the non-volatile acids. It is an oxidation product of galacturonic acid (botrytic acid) and is formed by the noble mold Botrytis cinerea. The sparingly soluble calcium salt of this acid may form as a white, crystalline precipitate during prolonged bottle storage. See all wine ingredients under total extract.
