Metabisulphite

Also known as sodium disulphite or sodium metabisulphite, this inorganic substance (E223) is a sodium compound of sulphurous acid, two-thirds of which contains active sulphur dioxide. It is used as a preservative and antioxidant in food. In viticulture, it is added to grapes to prevent oxidation of the must. See also under sulphur.
