mature

Description for a wine (also mature, developed, ready for consumption, ripe, vital) in the context of a wine evaluation or wine talk, which is at the peak (zenith) of its development. However, this is also used to describe the fact that the peak has already been passed. For the ageing process, see ageing, bottle ageing and shelf life, and for the optimum time to enjoy a wine, see drinking maturity and wine enjoyment.
