The winery is located in the municipality of Detzem (Bernkastel area) in the German wine-growing region of Mosel. Viticulture has been practised in the family for several generations. Tobias Lorenz took over the management of the winery in 2013 after completing a classical apprenticeship as a winemaker at the Van Volxem winery and graduating as a wine technologist from the training and experimental institute in Weinsberg. The vineyards cover eight hectares of vines in the single vineyards Maximiner Klosterlay and Würzgarten (Detzem), Ritsch (Thörnich), Held (Pölich), as well as Altärchen and Apotheke (Trittenheim). They are mainly planted with Riesling (80%), as well as Pinot Blanc, Müller-Thurgau, Chardonnay and Pinot Noir with predominantly old vines. In the vineyards, natural, environmentally friendly viticulture is practised by hand with cover crop and organic fertilisation. The wines are vinified with the aim of a clear structure of origin. Some of them are fermented spontaneously and matured in stainless steel, while the single-vineyard wines are matured in traditional large wooden barrels with long ageing on the fine lees. Around 80% of them are vinified dry or semi-dry. Bottle-fermented sparkling wines and noble brandies (marc, apple, Williams) are also produced. The latter mature for at least two years in small oak barrels. The winery is a member of the Generation Riesling, Slow Food and Moseljünger associations.
