Juponne

After removing the cork from a sparkling wine bottle (sparkling wine, champagne), its shape also reveals something about the storage period. If it is wider at the bottom (foot), it is known as a "juponne" (jupon = petticoat) and the bottle was probably corked less than a year previously. If the foot is narrow, it is a "Cheville" (cone), which means that it was corked some time ago. As a rule, a sparkling wine should be consumed as soon as possible; a "juponne" is therefore to be understood positively. See also under agraffe.
