The winery is located in the municipality of Burg Layen in the German Nahe
wine region. The management was handed over in 2002 by Johann Baptist Schäfer to his son Sebastian, now in the fourth generation of the family. Sebastian had been responsible for the vinification since 1997. The vineyards comprise 6.3 hectares of vineyards in the Schlossberg
(Layen Castle), Goldloch
(Dorsheim) areas. More than 50% of them are planted with Riesling, as well as Pinot Noir, Pinot Blanc, Pinot Gris and Scheurebe. The primary goal of winemaking is to produce wines with a strong emphasis on the terroir. A selective manual harvest and gentle processing takes place. Each wine goes through an individual process in order to fully develop its very special natural character. For this reason, the questions of fermentation with natural or pure yeasts, processing in steel tanks or wooden barrels and the duration of yeast storage are decided on a case-by-case basis. The winemaker means "to a certain extent in agreement with the grape must". Noble sweet Prädikat wines are also produced.
