The winery is located in the municipality of Westhofen (Wonnegau area) in the German wine-growing region of Rheinhessen. Its origins date back to the year 1466. An ancestor of the Zimmer family named Michael saved his sovereign from an attacking deer and received the land, the coat of arms and the name in gratitude. The estate has remained in the family ever since. Today it is run by Annette and Walter Zimmer (senior) and Ellen and Tobias Zimmer (junior). The emblem of a stag's head also adorns the bottle labels. The vineyards cover 25 hectares of vineyards in the single vineyard sites Aulerde, Kirchspiel, Kreuzkapellle, Morstein, Rotenstein and Steingrube (Westhofen), Eiserne Hand, Himmeltal and Steinberg (Guntersblum), as well as Höllenbrand (Gundersheim). They are planted with the white wine varieties Riesling, Müller-Thurgau, Kerner, Pinot Blanc, Silvaner, Huxelrebe, Pinot Gris, Scheurebe, Traminer and Bacchus, as well as with the red wine varieties St. Laurent, Dornfelder, Pinot Noir and Portugieser. Environmentally friendly viticulture is practised according to ecological principles with, for example, natural cover crop, organic fertilisation and the renunciation of chemical pesticides. The flagship of the house is the red wine cuvée "Selection Henri", which is blended from the two varieties Cabernet Dorsa and Acolon and aged in barriques. The winery is a member of the ECOVIN association.
