Gwäss

The term "Gouais" is derived from the French and is used to describe a white wine from the Swiss canton of Valais, which is made from the Gouais Blanc grape variety (Gwäss is also a synonym for this grape variety). The acid-emphasised, rustic-tasting white wine is produced purely from the variety, but is also used as a blend.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
