Gummi arabicum

The resin-like substance (also known as gum arabic, kordofan gum, senegal gum) is obtained from the sap of various acacias. It is a natural polysaccharide (polysaccharide). It is used in food as a thickener, emulsifier (e.g. for mixing oil and water) and stabiliser. In winemaking, gum arabic is used as a so-called complexing agent. Gum arabic is also used as a thickening agent in the production of wine gums. See also under agents used in winemaking.
