Term for the process in which liquid mixtures are broken down into their individual components using physical separation methods. This involves isolating or separating liquids with different boiling points (fractionating = separating). This is used in distillation, for example, where the individual fractions are successively vaporised and condensed by fractional heating. In this way, water can be separated from the alcohol. The process is also used in winemaking, for example in the targeted reduction of alcohol using thermal or physical processes such as the spinning cone column or vacuum distillation.
