The "Sekt- und Weingut Stephan Fischer" is located in the municipality of Zell-Merl (Burg Cochem area - Terrassenmosel) in the German wine-growing region of Mosel. The winery has a tradition of over 300 years and is now run by Stephan Fischer, the tenth generation of the Fischer family. The vineyards cover three hectares of vines in the slate steep slopes Burglay-Felsen and Nussberg (Zell). They are planted with the white wine varieties Riesling, Pinot Blanc and Pinot Gris. These are ungrafted vineyards. Quality-promoting measures in the vineyard include short pruning, fertilisation, soil cultivation and defoliation of the grape zone. Only physiologically ripe and healthy grapes are processed through selective manual harvesting. The wines are matured for a long time on the fine lees in a way that is typical for the variety and the vineyard. The bottle-fermented sparkling wines produced since 1989 are a speciality of the house.
