Term for a container or a so-called bioreactor in which certain microorganisms, cells or plants are cultivated (also fermented) under the best possible conditions. Colloquially, fermenter is also used in viticulture as a general term for fermentation container. Fermenters with special technology are auto-fermenters (see autovinification) and roto-fermenters. The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
