ethanolic fermentation

A more specific term used on a case-by-case basis (including alcoholic fermentation) for the biochemical process of converting sugar into ethanol and carbon dioxide. Usually this is simply called fermentation, but "ethanolic fermentation" is used to avoid confusion with bottle fermentation (for sparkling wines) or malolactic fermentation (mainly for red wines).
