Dumping height

Designation for the height of the grapes in a picking container during the grape harvest. The lower, the higher the quality of the grape must pressed from it. This is because too high a dumping height can damage and contaminate the grapes or infest them with putrefactive bacteria. There are often country- or region-specific regulations with maximum heights (e.g. in Austria max. 35 cm for the highest quality level of sparkling wine).
