Finally, from 1990, he worked at Château Pavie-Macquin as a cellar master and then as a winemaker at the Neipperg family vineyards, such as Château Canon-La-Gaffelière (Saint-Émilion). He started as a consultant to other wineries in 1997 and two years later founded the consulting firm "Vignerons Consultants" with his wife Christine.
He subsequently worked for around 20 well-known wineries in Bordeaux, including Château Chambert, Château Jean Faure, Château Le Prieuré, Château Prieuré-Lichine, Château Smith-Haut-Lafitte, Château Vray Croix de Gay, Clos Fourtet and Domaine de Chevalier. He was engaged by Francis Ford Coppola for his winery in Napa Valley in 2008. Further consulting activities abroad have been and still are in China, India, Italy, Lebanon, Austria, Spain, Syria and Turkey. Together with his wife, he runs the two wineries Domaine de l'A in the Castillon - Côtes de Bordeaux and Derenoncourt California area in Napa Valley, as well as the distribution company "Terra Burdigala" for quality wines with the wine dealer François Thienpont.
