Description for the smell and flavour of a wine in the context of a wine talk or wine evaluation. A bread-like impression is reminiscent of fresh white bread, bread crust, yeast pastry or brioche. It is mainly caused by prolonged contact of the wine with the yeast(whole yeast or fine yeast), especially during lees storage and during autolysis, when cell components of the dead yeasts are released. In contrast to yeasty, bready describes a further developed, maturity-related expression of the yeast flavour.
Bready notes are often found in sparkling wines from traditional bottle fermentation, such as champagne and sparkling wine, where they are considered typical and positive in terms of quality. Still wines matured on the lees (sur lie), such as Chardonnay, Chenin Blanc or Pinot Blanc, can also have subtle hints of breadiness.
