Closing Wine

Colloquial term for the wine that is served at the end of a multi-course meal. As a rule, one starts with a simple wine for the first course and increases with more complex wines to match the menu. Very often a sweet wine is served as the final wine, which has to be chosen according to the dessert (sweet dish, cheese). Regarding suitable alcoholic drinks "before the meal" see under Aperitif and "after the meal" under Digestif. On the subject, see also under Wine enjoyment and wine with food.
