The vineyard is located in the municipality of Fargues in the Sauternes region (Graves, Bordeaux). At the beginning of the 19th century, it belonged to a Marquis Montalier and underwent numerous changes of ownership and fragmentation through inheritance. The du Hayot family bought several parts in 1939 and brought them together under the name Château Romer-du-Hayot. A small second part remained in other ownership under the name Château Romer with 5 hectares. The current owner André du Hayot later leased Château Romer and now manages both estates together. The château was demolished due to the construction of a motorway and the wine is produced at Château Guiteronde (Barsac), which also belongs to the family estate. It was classified as Deuxième Cru Classé in the 1855 Bordeaux Classification ). The vineyards cover 16 hectares of vines planted with Sémillon (70%), Sauvignon Blanc (25%) and Muscadelle (5%). The noble sweet wine matures for 12 months in barriques.
