The winegrowing company is based in the municipality of Trento (Trento) in the Italian winegrowing region of Trentino. It all began in 1950, when a few winegrowers founded a winegrowers' cooperative. It was not until 1957 that the production of their own winery and the marketing of the wines began. In 1964, the headquarters were built in Ravina di Trento, and from 1977 onwards they were expanded to reach the current size of 80,000 square metres over the years. As a second-degree cooperative, Cavit has no owner, but members consisting of winegrowing families united in a cooperative. The company's goal is to promote the culture of quality wine in Trentino. The production volume is about 60% in Trentino. Cavit unites eleven winegrowers' cooperatives, which include more than 5,250 winegrowers with a total cultivated area of 6,350 hectares spread over the entire regional territory. From harvest and delivery of the grapes to marketing, Cavit controls the entire production process. Around 200 employees support the member wineries. Through further training and assistance to the winegrowers, the way is paved for the most advanced cultivation techniques. The management team consists of Lorenzo Libera (president), Enrico Zanoni (managing director), Andrea Nicolini (export director), Andrea Faustini (oenologist and scientific director of the agronomic team), Fabrizio Marinconz (oenologist and winemaker) and Paolo Turra (oenologist for sparkling wines).
The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
