Candy

Designation for the taste of a wine in the context of a wine address. This taste impression can be a sign of high maturity. Candy is understood to be rock candy or the taste of candied fruit. Candy is crystals of sugar that crystallize out of concentrated sugar solutions. Yellow rock candy is coloured with sugar couleur, brown rock candy is made from caramelised sugar solution. This is why the similar terms candy and caramel are often confused. In both cases they are sugar, but contain different flavours. The typical "burnt" taste of caramel is softer, creamier and "sweeter" in appearance.
