Protected designation of origin for a spirit from Brazil that (as opposed to rum made from sugar cane molasses) is produced from 100% fresh sugar cane juice. The alcohol content of cachaça must be at least 38% to a maximum of 40% vol. Products with a higher alcohol content (up to 54%) must be marketed as aguardente (aguardente de cana). A matured cachaça is stored in barrels for at least one year. In Brazil, the regions of Bahia, Minas Gerais, Rio de Janeiro, Pernambuco and Alagoas are primarily known for the production of cachaça.
