Designation (also called breaking out) for the removal of all shoots that sprout on the old wood (trunk, head, cordon) and are not used for a possible regulation of the vine structure as cone (short) or rod (long). This is usually done in spring, when the shoots are about 10 to 20 centimetres long. If they break out too early, the shoots will grow back again.
