Term for the phenomenon that the quality can differ from bottle to bottle, even if it is exactly the same wine (vintage, location) even from the same barrel. This can have various causes such as a wine defect that only occurred in a certain bottle. In professional wine tastings, therefore, if spoilage is suspected due to, for example, a cork taint, a second (and if necessary, third) bottle is opened, which is called a counter-bottle, in order to ensure a fair wine evaluation.
