Bottle deviation

Term for different qualities of a wine, even though it is the same product. When wines are matured and stored, the maturation and ageing process in the individual containers is never 100% identical. Particularly when ageing in smaller containers such as barriques, there is the phenomenon that (slightly) different wine qualities result. This is compensated for by equalising (blending) the containers before bottling. However, bottle ageing and maturation can also result in different qualities over time. Wine defects such as cork taint can also only occur in individual bottles, which is why a second bottle may be tasted during professional wine tastings as part of an official test or in competitions.
