Biffar Joseph

The winery is located in the community of Deidesheim (area Mittelhaardt-Deutsche Weinstraße) in the German wine-growing region of the Palatinate. It was founded in 1879 by Adam Biffar. In 2012 there was a change of ownership. The company, which is now called "Weingut Josef Biffar GmbH", is managed by Fumiko Tokuoka as managing director (the Tokuoka family, the Japanese owners, ran the Reichsrat von Buhl winery between 1989 and 2013). Michael Leibrecht is responsible as cellar master. In the nearby sparkling wine cellar "J. Biffar Wein & Sekt GmbH" In the Kathrinenbild, sparkling wines from the Palatinate are produced in traditional bottle fermentation. In addition, the Japanese restaurant "fumi" moved in there, which is dedicated to traditional Kappo cuisine (a way of dining where guests order directly from the chef, who cooks just a short distance away)

The vineyards cover 7.3 hectares of vineyards in the individual locations Herrgottsacker, Kieselberg and Leinhöhle (Deidesheim), Pechstein and Ungeheuer (Forst) and Luginsland (Wachenheim). They are 95% planted with Riesling, the rest with Chardonnay and Pinot Noir. The cultivation in the vineyard is consistently carried out according to the environmentally friendly guidelines of organic viticulture. The quality criteria of the house are extremely low yields, manual grape selection, gentle pressing, as well as longer fermentation time at controlled low temperature. Depending on the type of wine desired, the wines are matured in stainless steel or in barrique barrels, depending on the location or terroir.
