The winery is located in the municipality of Hattenheim in the German wine-growing region of Rheingau. The family business is run by Hans Bausch. The vineyards cover ten hectares of vines in the Engelmannsberg and Schützenhaus (Hattenheim) single vineyard sites, around 60% of which is classified as Erstes Gew ächs. They are planted with 85% Riesling, the rest with Pinot Noir. Environmentally friendly viticulture is practised with near-natural soil management, constant cover crop between the vine rows, organic fertilisation and minimised plant protection. Grape berry moths are controlled by means of pheromone traps and fungal diseases are reduced by measures such as defoliation of the grape zone. Quality criteria are reduced pruning with reduced yields and late harvesting with the aim of achieving the best possible ripeness of the grapes. The Rieslings are fermented in a cool place and matured in steel tanks with long storage on the fine lees. The Pinot Noirs are matured in traditional large wooden barrels or in barriques. Bottle-fermented sparkling wines are also produced.
