Always-full tank

Designation for a specially constructed steel tank in which the tank lid is lowered to the respective wine level and thus the tank can always be kept bung-full. The upper cover floats on the liquid, so to speak, and is sealed to the wall with a sleeve. This prevents oxygen from entering and thus oxidation. See also under fermentation top, bung and wine vessels.

Serious sources on the internet are rare - and Wine lexicon from wein.plus is one such source. When researching for my articles, I regularly consult the wein.plus encyclopaedia. There I get reliable and detailed information.
