Always full tank

permanently full tank (GB)
Designation for a specially constructed steel tank, in which the tank lid is lowered to the respective wine level and thus the tank can always be kept full to the bung. The upper cover floats, so to speak, on the liquid and is sealed with a sleeve towards the wall. This prevents oxygen from entering and thus oxidation. See also under fermentation attachment, bung and wine containers.
