Always-full tank

Designation for a specially constructed steel tank in which the tank lid is lowered to the respective wine level and thus the tank can always be kept bung-full. The upper cover floats on the liquid, so to speak, and is sealed to the wall with a sleeve. This prevents oxygen from entering and thus oxidation.
