Colloquial collective term for wines that are vinified using non-invasive (as much as necessary, as little as possible) and/or traditional methods and generally have a rustic character. The addition of sulphur, filtration and fining are avoided as far as possible. What the wine types have in common is a clear tannin structure, which is often achieved through long maceration times and/or oxidative ageing, even in white wines. This results in wines with a mouth-filling texture in combination with fresh acidity and earthy fruitiness.
