In the Spanish DO area of Jerez, the dominating bright white soil type, whose name means "white earth". It consists of 40% limestone with a high proportion of calcium sulphate, known here as Yeso, as well as clay and sand. This particular type of soil stores the rainwater of the winter months to supply the vines with water during the summer drought. These are ideal conditions for the white wine varieties Palomino and Pedro Ximénez and the top quality sherry produced from them. The rather poor, calcareous soil is called Arena. Albariza soils also occur in the Spanish DO area Penedès.
